Capital Spirits held a trial baijiu and cheese / meat pairing on Sunday as a warm-up for World Baijiu Day. The tasters included co-owners Bill Isler and David Putney and sausage purveyor Jonathan Alpart. We tried ten or so baijius with everything from Brie and blue cheese to spicy Hubei sausage courtesy of Alpart and pork, dried apple and sage sausage by Dustin Merrett, of deep-fried baijiu fame. The pairings range from “mmm” to “argh!”. Expect some of the former to make the final cut for August 8.
